After some tricky details that were fixed by the team within days (thanks Ella, Sergey) I managed to get my shop to work in an impressive number of languages, to 99.0%. I even could save the massive personalisation work I had done on my previous Wordpress/Woocommerce! RTL languages like Arabic or Hebrew are tricky in the Shopify themes, but we managed to navigate around this too.

Easy to use and excellent customer service. Thank you Elen and Ripa for helping this out. I would give then 10 stars if I could.
