Does not allow me to set product option inventory so that when a specific option is out of stock (say a blue handle) it will be grayed out.

Just to clarify - our app does support inventory-based options.

If a specific option (like "blue handle") is out of stock, you can make it grayed out by linking it to a Shopify variant.
