The Mailchimp for Shopify team reached out promptly to resolve this issue, their response was great. There is indeed a setting within the app to not sync bot (non-subscribed) contacts to your list, which was exactly what I was looking for. My app may have been out of date and that's why it wasn't showing. Thank you Mailchimp for your speedy help, I was struggling with this for awhile.

[original review] It's great until you have an issue with bots signing up to your email list. The integration has no way to filter out fraudulent/fake emails (whereas the standalone Mailchimp platform does). What happens is your contact list will get flooded with thousands of emails from fraudulent orders, that Mailchimp then charges you for because you're "over" your contact limit. It's pretty underhanded and almost like they benefit from not having better filtering settings within the app. You'd think an ESP of this level would have figured out a way to filter bot traffic. None of these contacts are actually "subscribed" to my list. I would even pay more for this feature, if only Mailchimp would integrate it. Please do something, Mailchimp!
